HARVEST:
by hand into small crates, 2 picks August 29th, Sept. 3rd

MACERATION:
The Leánka grapes are gently destemmed, crushed and then macerated on skins overnight.

FERMENTATION:
stainless steel, the 2 harvest were combined at the end of fermentation. free run juice only.

AGING: on lees, never touched, bottled by hand with great care in order to preserve the original CO2 suspended February of 2024. 15ppm So2 at bottling.

The 2022 vintage was extremely hot, so the grapes needed to be picked early, to keep acidity and the light body. The destemmed fruit was allowed to macerate and start fermentation before being racked into a stainless steel tank where it continued fermenting slowly for 6 months untouched. Finally it is bottled by gravity, bottle by bottle, directly off of the tank so carefully it retains the natural Co2 suspended in the wine from the first fermentation. 11% alc this embodies the region and easy drinkability. The warm vintage gave an especially gentle rendition of the wine with a bit more aroma and body. An all function, all day wine to complement chilled fruits, salads, light cheeses, poultry etc.
