Spontaneous fermentation.

50% aged in Stainless Steel, 50% aged in used barrique, combined and aged 1 year in used barrique.

2016 is the first time in decades that Kabaj bottled a pure Cabernet Franc. Much of the fruit comes from a young newly planted vineyard. It is the lightest structured and most aromatic of the Kabaj red wines. Style wise it is between left bank Bordeaux and Loire. It is an aromatic red wine of great balance and complexity. Sandalwood scented, leafy, damp and earthen. flavored with bitter red fruits, rocky spring water, well coiffed tannins and persistent acidity, a refreshing red wine of charm and depth.
