Low/no till, ecological treatments, manure.

COMPOSITION:
Rebula (Yellow and Green)

HARVEST:
End of September.

MACERATION:
1 month 100% of the skins, 3 months 20% of the skins, destemmed fruit.

FERMENTATION/AGING:
Spontaneous fermentation in stainless steel.

AGING:
2 years on the fine lees in used French barrique.

Named for the great grandmother of Katja Kabaj, Luisa, was responsible for not just the kitchen but also the cellar. This was a time when wine was not bottled by grape variety, but instead were cuvees specific to each cellar. Luisa is the premier white wine of the estate outside of the anomalous Amfora.. Luisa is a long cellar cuvee based on Rebula, but a combination of all the white varieties of the KABAJ vineyards. REBULA is with the skins for 30 days, the other grapes not. The wine is built from selected barrels that Jean Michel follows through the cellar and marks. This gives the greatest opportunity to fashion the wine. Elegance is the destination, the wine is dry but age gives it a sweetness, LUISA is the essence of BRDA. A long aged cellar cuvee based in Rebula but a combination of all the white varieties of the KABAJ vineyards. REBULA is with the skins the other grapes not.
