Low/no till, ecological treatments, manure.

COMPOSITION:
Merlot.

HARVEST:
Late September.

MACERATION:
2 weeks with the skins then pressed into stainless steel to finish fermentation before barrique

FERMENTATION:
Spontaneous fermentation in concrete, and stainless steel.

AGING:
24 months in used French barrique

Merlot's the red grape that KABAJ is most associated with as well as the entire region.  You could say it's the red equivalent of Rebula. Even experienced producers can make impressive wines from it. Being that winemaker Jean Michel is from Bordeaux, France, it is no accident that the Merlot they produce is such a classical representation of the grape. When questioned about what grapes they're planting in new vineyards, it's always "Merlot, Merlot, Merlot, Merlot. For Kabaj Merlot is connected to the future of the region and their cellar. The conditions of Brda produce an understated expression of the variety where its musky perfume tempers the grape's inherent fruitiness. Never above 13% alcohol. It presents a cooler face. The extract is substantial, but the long aging softens the wine in a way that only time allows. Alternating notes of Plum, anise, pine resin and rose. It is a substantial wine but focused on softness not intensity. Those attracted to the red wines of the Loire will appreciate its understated, savory demeanor.
